CHICKEN FAJITAS
8 oz. strips of boneless chicken breasts
2 large bib lettuce leaves OR low-carb tortillas
½ green pepper, in slices
¼ cup onions or scallions
1 tsp. Mrs. Dash® extra spicy seasoning
1 oz. water
½ small tomato
1-2 Tbsp. salsa
1 Tbsp. plain non-fat yogurt

Stir fry pepper, onions, chicken, and seasonings.  Place half
of mixture on each lettuce leaf.  Top with tomato, salsa and
yogurt.  Carefully roll lettuce around mixture like a burrito.
You may use a low-carb tortilla if  desired.

Lee's Easy Shrimp (or Fish or Lobster) Bisque

1 jar Spicy Red Pepper Classico Tomato Sauce
1 medium bag medium -sized frozen shrimp
1/4 to 1/2 cup plain soy milk or skim milk

That's it!  It will taste like a gourmet bisque!  For Fish Chowder, for maintenance clients, add a 1/4 cup of fresh corn or small can, and 2 cod filets and whatever veggies you like: okra, tomatoes, or peas. It is delicious and the creaminess of the milk takes away the acidity.  

You can add a packet of our Clear Tomato Soup to give it more protein to fill you up faster and to give it an extra sweetness.  I never eat the soups plain.  I always add things to them to make a soup to take away the protein taste, but, boy does that extra protein fill you UP!

Cherry Cheesecake
***great for July 4th!***


6 eggs or Eggbeaters equivalent
1 – 24 oz.container Low-fat Cottage Cheese or Lactaid Cottage Cheese
1 pkt.Before And After Vanilla Creme Pudding
1 pkt. Before and After Lemon Drink or Cherry Gelatin
1 pkt. of Knox gelatin
1 can of Lite Comstock Cherry Pie filling
3 droppers full of Clear Stevia
       
Can make crust with melba toast and Walden Farms Caramel dip.

Blend all ingredients in blender until smooth. Pour into 9 x 9 pan that has been sprayed with Pam. Bake at 350° for 30 minutes. Turn oven off and open oven door and let sit in oven for 1 hour. Serve either hot or cold. May be served with 1 tsp. of Cool Whip.When you are on maintenance you can add a block of no-fat cream cheese to it!

Punch Bowl Cake (Great for July 4th because of it's Patriotic Look!)
2 pkg of pudding mix
2 pkgs of strawberry jello mix
2 cups of blueberries
2 cups of strawberries
1 angel food cake (sugar-free)
1 lg. Cool Whip



Make up the pudding mixes and jellos according to directions and then layer between crumbled cake. I put pudding, then cake, then a layer of jello with the stawberries in it, then cakem then pudding tieh the blueberries on top, etc. In a glass trifle bowl, this looks so pretty! For an American holiday, very patriotic on your table. Great for diabetics and for those on a diet!

Frost on the Berries
1/2 cup frozen blueberries
2 Tbsp. Walden Farms Marshmallow Dip
Fold the dip into the blueberries and let set. Can eat alone or over yogurt.

Zucchini Crust Pizza

Pizza is one of those foods that is notoriously difficult to eat when you have diabetes.  But you can make your own crust with either zucchini or cauliflower, both of which are very low in carbs, and your sugar will be fine! If you use zucchini, pat it dry with a paper towel or put it under the broiler for a few minutes to get some of the liquid off of it because it may be soggy if you don't.

Olive oil and flour for the pan
2 cups (packed) grated zucchini
2 eggs, beaten
1/4 cup flour
1/2 cup grated mozzarella
1/2 cup grated parmesan
1/4 teaspoon dried basil
2 tablespoons olive oil

Preheat oven to 400 F. Drizzle a little olive oil in a 10" pie pan and coat lightly with flour.
Combine the zucchini, eggs, flour, mozzarella, parmesan, basil, and 1 tablespoon olive oil in a bowl and mix well. Spread into the pie pan and bake for 35 to 40 minutes or until golden brown. About halfway through the baking, brush with the remaining olive oil. Remove from oven. When it has cooled for about 10 minutes, use a spatula to loosen the crust from the pan so it won't break later.
Top with your favorite pizza items and bake at 400 F until heated through.

Easy Baked Crab Ragoons

1/8 tsp garlic powder
!/4 tsp. chili powder
1/8 tsp. Worchestershire sauce
1 small green onion
4 oz. crab
3 oz. fat-free cream cheese
14 wonton wrappers (use lowest carb ones)

Microwave the cream cheese for about 30 seconds to soften.  Cut up the crab and mix with the other ingredients .  Spoon into wontons and twist at top.  Bake at 425ยบ F for 8-10 or until golden brown.

Easy Pepperoni Pizza Soup

1 jar Classico Spicy Red Pepper
1 packet Before and After Chicken Soup, prepared (or 1 c. chicken broth)
1/4 package 70% fat-free pepperoni
1/4 tsp. Italian seasoning
1/4 cup shredded Mozarella cheese

You may saute some mushroons and onions and green peppers for added flavor and even add ground beef if you have left overs.

1/2 tsp. coconut flavoring
1/2 tsp. banana flavoring

1 dropper full of Valencia Orange Stevia
         (if you have Clear Liquid that is fine, too)


Blend all ingredients in blender until smooth. Pour into 9 x 9 pan that has been sprayed with Pam. Bake at 350° for 30 minutes. Turn oven off and open oven door and let sit in oven for 1 hour. Serve either hot or cold. May be served with 1 tsp. of Cool Whip.When you are on maintenance you can add a block of no-fat cream cheese to it!

Diet Snickers™ Caramel Chocolate Milkshake

*this doesn't have any Snickers in it but sure tastes like you are drinking the candy bar! I promise, your eyes will roll back in your head! Mmm good!

1/2 c. soy milk (or Hood's Low Carb Milk if allergic to soy)
12 oz. water
2 heaping tsp. PB2 (powdered Peanut Butter)*1 pkt. of Before and After Chocolate Drink**
1 heaping Tbsp. Walden Farm Fat Free Caramel Dip**
1 pkt sweetener or 3 drops stevia if desired
1 cup of ice Blend on the ice crusher with your blender!

*PB2 can be obtained through our weight loss clinics for $5.95 per jar. More recipes are on this blog for this product. You can mix with water to make regular peanut butter but the kicker is: regular PB has 16 grams of fat in 2 Tbsp and this only has 1.5!!!!

Chocolate Peanut Butter Pie

3 pkts of B&A Chocolate Pudding
8 oz. Water
4 oz. Soy Milk
3 Tbsp. PB2 (Powdered Peanut Butter)
1 pkt. Knox gelatin
2 pkts. Splenda

Crust:
15 Melba Toasts
2 tbsp. Caramel Dip (Walden Farms Fat-Free, Sugar-free)
1 tsp. PB2
1 pkt. Splenda

Top with Cool Whip. I like to put 2 Tbsp. Walden Farms Fat-Free Sugar-Free Marshmallow Creme in the Cool Whip--it makes the whole container tastes like marshmallows!

ideas  to get you started:

1) You can mix it in pudding--it tastes great in our Butterscotch, Chocolate or Vanilla Creme Pudding.

2) You can blend 2 Tbsp- 3 Tbsp into a Chocolate milkshake made with our Chocolate drink or our Double Chocolate Pudding.

3) You can make candy with it: blend a tablespoon of Walden Farms Carmel Dip and Chocolate Sauce into 4 tablespoons on top of a piece of plastic wrap.  Then roll and wrap and place in the freezer for 15 minutes.  SO yummy!

4) Make a Chicken Stir Fry with a can of chicken, Japanese frozen veggies and 2 Tbsp. PB2.  I also use a Thai spice called Spice Hunter Thai seasoning that has some coconut powder in it and, boy, does this taste authentic!

5) Put it on fruit--apples, peaches, nectarines or on celery.  If you are on maintenance or have children--you can do Ants on a Log with celery, PB2 and raisens down in a row!

6) Put it in this year's pumpkin pie!  But be careful that it doesn't overpower your pumpkin taste.

Curried Mushroom Chicken

This can be served over toast, spaghetti squash, or Shirataki Tofu noodles!  We just added these tofu noodle to our Belly Buster Diet menus and you can get them at the grocer in the vegetarian section.  They have only 3 carbs per serving!

2 chicken breasts
1 tsp curry powder
1 tsp cumin
2 pkts Before and After Clear Chicken Soup 
2 pkts Before and After Cream of Mushroom Soup
1 stalk of celery
Broil chicken until about half down in the oven.  (OR use chopped cooked chicken to do quickly on the stove). Put half the ingredients on the chicken and simmer for 30 minutes, then add the other half and simmer for another 10 minutes. Serves two.

CHOCOLATE-COVERED STRAWBERRIES


So easy to make! Just mix 1/4 cup of Sugar-free Walden Farms Chocolate Sauce with 1/4 cup of Eggbeaters or egg whites and dip each strawberry in the mixture. I like to leave the stems on to hold the berry while I dip. Pleace the berries on a cookie sheet or in a miniature muffin tin sprayed with cooking spray and place in the freezer for 20 minutes. The berries will be cold and frosty and, oh....so delicious!

Sonya's Turtle Pumpkin Pie

Crust: Crush melba toast and mix with 3 Tbsp. Sugar-free Walden Farms Caramel dip; press in bottom of 8x8 glass pan prayed with cooking spray. 

Topping: Mix 3 Tbsp Sugar-free Walden Farms Marshmallow dip with small container of Cool Whip. The whole thing will taste like marshmallows!

 Pie: In a blender combine 3/4 c. Eggbeaters (or 3 eggs), 1 c. milk or soy milk, 1/2 can pumpkin , and 2 pkts of Vanilla Creme Pudding mix and 1 tsp of Pumpkin Pie Spice. It will be thick. Pour over crust and bake at 350ยบ for 30 min. Cool in the refrigerator until completely chilled and then serve with 2 pecan crumbled over each serving with a Tbsp of Marshmallow mix and just a little Walden Farms Chocolate Sauce drizzled back and forth over it.

Pumpkin muffins


Pumpkin muffins tastes like sweet potatoes! Make them in the small muffin tins or they won't get done in the middle.


1packet of Before and After Vanilla Creme Protein Pudding

1packet of Before and After Oatmeal w/ Apples Supplement

1/2 cup water

1/3 cup canned pumpkin

1/2 tsp vanilla flavoring

3 drops of Stevia

1 teaspoon of pumpkin pie spice


Bake at 350 degrees for 15 minutes or until brown. Makes 18 muffins and 9 are a serving! Tastes great with our Cappuchino Protein Supplement!

Broccoli and Cauliflower Salad
1/2 head of cauliflower
1/2 head of broccoli
1/2 red pepper, diced
1/2 yellow pepper, diced
1 small onion, sliced exceptionally thin
1/2 bottle Walden Farms dressing of choice**

Cut the cauliflower into bite-size pieces in a large bowl. Stir in the peppers and onion. Drizzle the dressing into the salad while stirring slowly. Can add a half of jar of Hormel Bacon bits just before serving or, peanuts, almonds or sunflower seeds IF ON MAINTENANCE. Some of my favorite Walden Farms with it are: Creamy Italian, Creamy Bacon, Balsomic, Honey Dijon, or Zesty Italian.
Marinate overnight for best flavor.

Potato Salad without Potatoes

Serves: 4
There's no potatoes in it but
you'd never guess it !!!!
2-hard boiled eggs
2- 10-oz pks of frozen cauliflower
1/2 chopped onion
4 Tbsp Hellman's LiteMayo
2 Tbsp bacon bits
Seasoning salt to taste
Cook cauliflower, cool and mash it then put in refrigerator for 1/2 hr to
cool. Chop up the eggs add to cauliflower. Mix other ingredients with
cauliflower and eggs
Refrigerate for an hour.

WHAT IS THE GLYCEMIC INDEX & HOW CAN I USE THAT TO HELP ME LOSE WEIGHT?

Think of Glycemic Index as a measurement of the how carbohydrates in foods will affect your blood sugar. It works like this: pure glucose is assigned the index of 100 to compare it to how other foods affect the blood sugar about two hours after eating. All other foods in the index are given a number relative to the glucose number.

Foods with a low index typically break down slowly and don’t cause drastic fluctuations in blood sugar. Foods with a high index typically do. For instance, broccoli has an index of 10, while corn flakes have an index of 92. Originally the index was developed to help diabetic control their blood sugar. The numbers will also help people losing weight, as well, because when the glycemic index is high, you get hungrier when your blood sugar starts falling again. The more it has to fall the more ravenous you can get when your blood sugar is not under control. If you can keep your blood sugar more stable, you don’t have such strong cravings.
Type II diabetes, as well as various cancers and cardiovascular disease, are all highly correlated with high index diets. There’s abundant research that shows that reducing the overall glycemic index also reduces the risks of those problems.

The index includes mainly carbohydrate foods, because protein and fat don’t have much immediate effect on blood sugar. At Before and After Weight Loss Clinics and with the Belly Buster Diet, we find the index more helpful than counting calories or grams of fat. We watch whether the foods we’re eating have a low, medium or high index, not individual numbers.
As with any rule, there are exceptions. For instance, watermelon has a pretty high glycemic index, about 75, which is even higher than table sugar. Does that make it bad for you? No. Because in spite of its high index, watermelon actually has a pretty low glycemic load. That’s a measure based on the amount of food you’d actually consume, not just an arbitrary quantity used in testing, as with the index.

The glycemic load of a food can be determined using the glycemic index number for a food, divided by 100 and multiplied times the available carbohydrate you’d eat. With most foods, low index is consistent with low load, but there are the quirky exceptions. Of course, to find them, you’d be back to doing a bunch of math again, and that’s just not the way people normally eat.
That’s we encourage people who are trying to develop a healthy diet to avoid getting caught up in the numbers game and look more generally at the foods in the index, leaning toward those at the low end. Anything over 70 is considered high index, 55 through 69 is medium and below 55 are foods with a low glycemic index.

And look what’s in those groups: high index foods include most breakfast cereals, white breads and other processed baked goods, most potatoes, ice cream, candies and table sugar.Lower index foods include cherries, grapefruit, broccoli, legumes like lentils and beans, most whole grain baked goods and most dairy foods. We like to encourage clients to think of glycemic index and glycemic load as just two more tools that can be helpful in developing healthier thinking and planning about dietary habits.

Fruits tend to have a high glycemic index, so I recommend that people take their fruits with a meal, or with some protein like cottage cheese or regular cheese. These protein sources help the fruit sugar be released in the blood stream more slowly. If you are snacking on a half of an apple for instance, eat a piece of cheese with it, or if you eating watermelon, eat it with a meal rather than an in between snack.

A final thing to remember: there’s not one standardized list and most indexes include brand-name items that people buy on a typical shopping trip, as well as the more generic items like vegetables and fruits. Her are some indexes I have found helpful:
